Chicken & Spinach Lasagna

So I had a hankering for lasagna, but I didn't have any of my homemade pasta sauce or any mozzarella on hand. I decided to take what I had, and give it a shot. This lasagna turned out pretty well, and wasn't terribly difficult to make, since you don't have to pre-cook the noodles. If I had to complain, it was a little dense. I'll plan to make it again so I can get it perfect.  It probably needs ricotta and mozzarella, and maybe a little more spinach.  Hit the jump for the recipe!

Delicous tex-mex food. I love the stuff, and often whip up a quick quesadilla for dinner when I'm short on time or motivation. This recipe from Plain Chicken is a bit more involved, but the payoff is totally worth it. The bonus is that the "spanish rice" is barely any extra work, and adds a lot of flavor and mileage to the dish. I believe I got at least six meals out of it. I didn't make the sauce that the recipe calls for, just topped with sour cream and salsa. Muy bueno!

Ahora tengo hambre.

So I realize I don't actually talk about Doctor Who a lot on this blog, so I wanted to take a few minutes to discuss the most recent series finale of Doctor Who, "The Name of the Doctor." My Hitchhiker's Guide

I picked up a used Kindle Touch from Cowboom a few weeks ago, for about $40. I've had my eye on the Kindle since it first came out, but never got one, because I haven't had much time for reading in the past (hence all the audiobook reviews on this blog). But at that price, I really couldn't pass it up. Naturally, my first instinct was to jailbreak it, and set up custom screensavers, like the one below. Yes, I am quite the hoopy frood.

If you haven't guessed, I like Stephen King. A lot. I've read the majority of his books, most of them at least twice, the Dark Tower series at least four times, and "It" at least five.So when I say that the audiobook version of "It" was hands-down perfect, maybe it will carry a little weight.
