So I had a hankering for lasagna, but I didn't have any of my homemade pasta sauce or any mozzarella on hand. I decided to take what I had, and give it a shot. This lasagna turned out pretty well, and wasn't terribly difficult to make, since you don't have to pre-cook the noodles. If I had to complain, it was a little dense. I'll plan to make it again so I can get it perfect. It probably needs ricotta and mozzarella, and maybe a little more spinach. Hit the jump for the recipe!
